apple-scented breakfast oatmeal + buckwheat.

bc it's been ages since we've talked food and there's nothing like a warm bowl of oatmeal on a snowy winter morning. found this guy on whole foods.


serves 4

top this nutritious, hearty breakfast with fresh berries, dried fruit and nuts or flax seeds and then pour a bit of hemp or almond milk over the top. only have frozen fruit on hand? stir it into the pot during the last few minutes of cooking.

ingredients.

1 cup rolled oats 
1/2 cup buckwheat groats 
2 cups pure apple juice 
2 cups water 
1 cinnamon stick


put oats and groats into a medium pot and cook over medium heat, stirring often, until toasted and fragrant, 5 to 7 minutes. meanwhile, put juice, water and cinnamon into a small pot and heat over medium heat until hot. 

carefully add hot juice mixture to oats and groats and return to the heat. bring to a boil, reduce heat to medium low and simmer, stirring occasionally, until liquid is absorbed and oats and groats are tender, about 10 minutes. remove and discard cinnamon, ladle into bowls and serve.

ingredients.

4 honeycrisp apples, cored and chopped 
1/4 cup orange juice 
3/4 cup pecan halves 
3/4 cup hazelnuts 
3/4 cup raisins 
3/4 teaspoon ground ginger 
3/4 teaspoon ground cinnamon


put apples in an 8-inch square baking dish or 2-quart casserole dish. drizzle with orange juice, toss until the fruit is coated and smooth the top. in a food processor, combine pecans, hazelnuts, raisins, ginger and cinnamon and pulse just until chopped. spoon the nut mixture over the apple mixture and serve. serves 8.

apple slices with goat cheese + pistachios.

what you'll need.

1/4 cup creamy goat cheese spread or fresh goat cheese 
2 Granny Smith apples, cored and cut into 24 slices 
2 tablespoons finely chopped pistachios 
2 tablespoons finely chopped candied ginger


spread 1/2 teaspoon goat cheese onto the end of each apple slice and then arrange on a platter. sprinkle cheese end with pistachios and candied ginger; serve. if not serving right away, to avoid browning, toss apples with a splash of lemon juice before assembly.
